Justea roots in Hamburg, Germany and founds its origins through
Tea Mixology
In Asia, tea culture has been deeply ingrained in
people's lives. The most representative example
is China’s 5000 years of tea history.
Located to the south of China, Taiwan has held an indispensable role in the contemporary
age of tea. The tea industry in Taiwan has
planted its root for more than 200 years, with tea manufacturing technology and quality that is internationally renowned. Formosa Tea (Title of
tea from Taiwan) has always enjoyed an excellent reputation in European auctions.
In the 1980s, one local teashop in Taiwan had
successfully mixed a traditional dessert, Tapioca
pearls, with tea and milk, creating the unique
drink : Pearl Milk Tea.
Later in the 1990s, Pearl Milk Tea became a
hit drink in Asia, inspiring subsequent mixes of
various ingredients with tea, such as fresh fruits,
juices, jams, yogurt, pudding, and more.
This ushered in a new era of Tea Mixology.
In 2007, Justea GmbH became the first to
introduce Tea Mixology and mixed-tea into
Germany. After the trend reached its apex till
2011, there were thousands of mixed-teashops
on the land.
Some people consider mixed-tea a kind of fast
food. However, that is not the intention.
Mixed-tea originates from pure tea.
In order to create different possibilities with
various ingredients, the proportion of tea and
ingredients requires a careful balance. The skill
required to make various kinds of mixed-tea is
akin to bartending; it requires professional taste
and techniques.
Justea GmbH is the only local mixed-tea importer
in Germany that not only possesses professional
mixed-tea knowledge, but each product collection
has a perfect track record for passing various of EU inspections over the years.
The mixed-tea industry of Germany has moved
into a transition period from 2012. In the same
year, Justea shifted to cooperate upstream food laboratory & manufacturer Chuan Dai Enterprise's research and development of Molecular Berry.
Molecular Berry is a mass produced product
based on molecular cuisine chef, Ferran Adrià's
modernized Spherification cooking method.
Inspired by the Spherification theory, we created
Molecular Berry through a naturally composed
wrap with Sodium Alginate, which contains
Calcium liquid. The liquid forms a stable sphere
on the outside but contains juice (or liqueur) on
the inside.
Specially selected ingredients are used for
research and all procedures follow international
food research and production standards HACCP
& ISO22000:2005. Although we are now equipped
with state of the art engineering facilities and
technology, the love for improving tasting
experience has not stopped.
Spherification Cooking has become a trend within
modern molecular cooking. Besides the novelty,
it brings to the culinary experience, it also will
"keep diners awake and alive throughout, so
that they never know what to expect from the
next dish” (according to the molecular cuisine
chef, Andoni Luis Aduriz), providing a broader
scope for professional chefs to interact with.
However, Spherification Cooking involves
scientific research and expensive facilities.
Not everyone can attempt with ease.
Our idea is to make mass-produced spherical
food by utilizing the professional machinery
and knowledge available. Besides satisfying
customers' appetite and curiosity, it also
welcomes professional chef's creativity.
